For supper yesterday, I made:

• Fried Fish with Pickled Jalapeño Mayonnaise
• Oven-Fried Onion Rings

I made a mistake while making the fried fish – I used the cracker/chip coating for the oven rings instead of breadcrumbs.  The mistake certainly did not hurt the flavor.  The boys and I loved it.
