Good ol’ Smithfield Ham

Fredericksburg.com has an article that explains the Smithfield ham curing process. Did you know that a genuine Smithfield ham does not actually need to be cooked, and will keep indefinitely?

As a child, I remember Thanskgiving as the day my grandparents butchered hogs if the weather cooperated (weather was cold enough). My job was to run the meat from the hogs to the kitchen. They also had a large smokehouse near their house, and it usually contained several pieces of meat that would always taste delicious after my grandmother cooked them.

Hmmmm. Ham….
